Bavette’s Steakhouse and Bar Review – It’s Not Just a Steakhouse, It’s an Experience

In a city where modern sleekness is the new modern, Bavette’s Steakhouse is a refuge inside Park MGM’s casino. When you walk inside the large, dark classic leather doors, the comfortable ambiance will transport you to another place, one that does not feel like it’s in a Las Vegas casino. Bavette’s has a warm, intimate feel, reminiscent of old Chicago. And the attentive, efficient service add to the fantasy of that journey.

The dining area is surprisingly large, but was designed to make you feel like you were dining alone. While the lighting is a little dark, the numerous tiffany lamps, chandeliers and other small lights can assist in reading the menu, and they truly enhance the ambiance. The jazz music in the background was subtle, yet contributory to the overall relaxing, comfortable feel.

The service was impeccable. Our waiter Randall was very cognizant of our time, making sure he knew whether we had time to linger and enjoy our experience to the fullest, or if we needed more timely service to make it to a show. He also provided great suggestions for pairing drinks, choosing appetizers (and not ordering too many rich items), wine (their list is extensive) and desserts, and he knew the menu completely.

We started with crafted cocktails, which were exceptional. The Hibiki Tokyo Old-fashioned was a delicious, smoky, “manly” drink, with a perfect block of ice (instead of many cubes that melt too quickly), while the Lillet Rosé Martini was a light, refreshing and too-easy-to-drink-too-many kind of drink. Both were expertly prepared and served with a flair.

Hors d’oeuvres were the beginning of difficult choices. The selections vary from baked goat cheese to steak tartare. We went with the garlic shrimp de jonghe, and the baked crab cake, both exceptional choices. The crab cake was served with a wonderful remoulade sauce, however you may want to reserve the sauce for only every other bite, as the crab cake was so delicious on its own.

While we did not try the seafood towers, they were an amazing sight when they passed our table, served with the panache one would expect in Vegas….and their decadence is the only thing at Bavette’s that might even remind you that you are in Las Vegas.

It’s a good bet that all of the salads are also as carefully prepared and as worthy of ordering as any of the appetizers. The wedge salad was artfully presented, and certainly the crab stuffed avocado would satisfy any seafood desires in case you didn’t order the crab cake or any of the seafood towers. All in all, the vareity of salads was refreshing to see. We just didn’t have room to try one!

The side dishes are all so appealing, it’s easy to want to try them all. But, be forewarned, the portions are more than plenty to share! With our waiter’s help, we decided on the brussels sprouts (charred, with dijon and parmesan, lending a slightly sweet, wonderful flavor) and the truffle mac and cheese (delicate truffle flavor with smooth white cheddar). Both great choices! Next time we will be trying the creamed spinach (with blue cheese and caramelized onions) and the charred broccoli (with butter and lemon). Or perhaps the candied sweet potato, or the elote style corn, with chili, lime, cilantro and parmesan . . . .

When it comes to entrees, again the choices are hard. There are classics, such as broiled salmon, roasted chicken and lamb chops, however it is a steakhouse, so, again with our waiter’s help, we settled on the 22 oz. dry aged  bone in ribeye (plenty for two people to share). It was cooked perfectly as ordered, and served conveniently sliced for sharing. The 42 days of dry aging made this melt-in-your-mouth steak truly great. As with the crab cake, toppings were available (roasted garlic, wild mushrooms, even lump crab), but honestly, the flavor was so amazing it doesn’t need enhancing! And, all of the steaks are served with a home made steak salt, another nice touch.

And what dining experience wouldn’t be complete without dessert and coffee? Bavette’s does not disappoint on this front either. The chocolate cream pie was smooth and perfect, and the carrot cake was a three-layer masterpiece. The french press coffee was the perfect compliment to these heavenly desserts. The lemon meringue pie was recommended, and after seeing it go to someone else, we wished we had given it a try!

It’s hard to say whether the food, the ambiance or the service are what make this dining experience so awesome. Perhaps it’s all of it. One thing is for sure: if you are staying at Park MGM, Bavette’s needs to be on your “must do” list. And, if you are not staying at Park MGM, it is definitely a worthy destination for a dinner experience that might be the best memory of your Vegas trip!
